Salsa Chicken

I thought I'd share a recipe I made tonight. It happens to be Addie's favorite dish right now, and she requests it frequently. Enjoy!


Salsa Chicken

1 1/2 - 2lbs boneless, skinless chicken breast
1 pkg low sodium taco seasoning
1 jar mild taco sauce
1 large jar mild salsa
2-3 green peppers sliced into strips
2 onions sliced into strips
1 tbsp flour
cheddar jack cheese
rice
sour cream (optional)

Preheat the oven to 400 degrees. Pour the whole bottle of taco sauce in a glass 13x9 inch baking dish. In a shallow bowl mix together the taco seasoning and flour. Coat the chicken breasts in the flour and lay in the prepared baking dish. Sprinkle the rest of the seasoned flour over the chicken. Add the peppers and onions to the baking dish and top with the salsa. Bake for 1 hour, or until the chicken is cooked through. Serve over rice with cheese and sour cream.
